My name is Serhii Oseredko, and I am head chef at James Dean restaurant in Prague. Let me introduce our major suppliers and the main ingredients that our team of chefs uses to prepare delicious and unique specialties. Each ingredient goes through rigorous selection, and we always try to buy the best on the market. We don't think about profit, but rather the quality and taste experience that we create for you with love.
Burgers play a crucial role in the James Dean Prague menu. Chuck Roll beef guarantees a unique experience. This is matured beef from the back between the neck and the high loin, which has a characteristic brick-red color. Chuck Roll is biologically very valuable meat that has a high content of essential amino acids, iron and vitamin B2. It is particularly suitable for grinding and making hamburgers.
Quality is of key importance in our restaurant, which is why we create our meals from start to finish. To complete the unique burgers, we cook them on a lava grill, giving them a beautiful smoky aroma and refined taste.
What would a hamburger be without a bun? To complete the burger, we choose homemade buns from the Mansson bakery. The owner of this little shop is from Denmark, and he has been living in Prague for many years. Thanks to his tasty recipes and our shared ideas, we've created a perfect baked gem. Each baked good passes through the baker's hands, giving it a unique appearance. The buns are made from Scottish sourdough with milk. They are also sprinkled with sesame seeds. That's not all! We also fry the buns in butter, which makes them beautifully crispy and intensifies their delicious taste. For those who prefer a healthier bread, we also offer a whole wheat version.
Fruit and vegetables are an integral part of our ingredients. Mr. Soukup, who has a traditional greengrocery in Kunratice, supplies our fruit and vegetables. He has been working in his field for 20 years; his work is his hobby, and this is reflected in the quality of his products. He personally supervises the selection of goods in Munich, Germany, where he travels twice a week. These facts guarantee that the fruit and vegetables we serve are always fresh and of top quality.
The quality of eggs is a frequently discussed topic. Eggs are a very important ingredient for chefs, and we therefore leave nothing to chance. We've chosen Mr. and Mrs. Šilar as our supplier. They are owners of a small chicken farm near Pardubice. These are free-range chickens that are fed pure natural food, which produces eggs with a very intense flavor.
Finally, we are proud of our unique collaboration with holder of multiple gold medals and the title of the best marmelade in the world, Blanka Milfaitová. We are the only restaurant in the world that serves these premium marmalades. Their quality is not only attested by the numerous awards, but also by the fact that they were previously supplied directly to the Queen of England, Prague Castle and other major international institutions.
A suitable choice of wine is inherent to complete a gourmet experience. Salabka vineyard, which boasts an area of approximately 4.5 hectares and is the largest vineyard in Prague, satisfies this rule. The grapes are grown on the southwest slope between Troja and Bohnice. This unique location, in combination with the subsoil, provides ideal conditions for the growth of first-class quality grapevines. Technology that has been proven over centuries, which dates back to the 18th century, is used for the production of the wine. The Troja vineyard has cultivated grapevines for Czech kings, and it continues to „create a beverage fit for a king” to this day.
